Vie Restaurant - Western Springs
A destination spot in Western Springs for finely crafted American cuisine with an emphasis on locally grown ingredients, Vie is owned by acclaimed chef Paul Virant.
For years, Virant has partnered with Mick Klüg Farm, which provides the restaurant with high-quality produce for its seasonal dishes. You'll get the chance to see for yourself when you order salads, soups or desserts (or order from Klug's online farm stand).
Share-ables, for example, include offerings such as deviled eggs with pickled okra, pea shoots and chili oil or the signature salad (greens, shaved radishes, pickled summer beans, garlic and herb vinaigrette, parmesan). Entrees are forever changing due to seasonality, but what can always be expected are the burgers and sandwiches.
The CDK steak sandwich is one of the signature bites. It consists of a wood-grilled Hanger steak, horseradish aioli, cheese curds, pickled sweet peppers and grilled onions between house-made bread. The burger is made from 21-day dry-aged beef. And an eggplant parm is topped with marinara, mozzarella and giardiniera between focaccia.
