Located on the roof of the Hilton Canopy & Hilton Garden Inn in The Loop, Seville presents largely Mediterranean cuisine, featuring seafood, house-made pasta, pizzas, many veg-forward dishes and some spectacular pork belly options.
Though Seville draws from a number of culinary foodways, Spain is (predictably) at the forefront of the menu. Tapas -- Spanish small plates, to be shared -- are well represented with traditional and nontraditional offerings. From the more traditional side, there's jamon and cheese croquettes, grilled octopus and gambas al ajillo (shrimp in sherry with shallots and herbs). Tending more toward modern Spanish cuisine, you'll find table-side smoked beef tartare (with accompaniments. like capers, egg yolk, shallots with a giardiniera aioli), house pork belly bacon with chickpea gastrique, and bone marrow with Calabrian chili bread crumb and onion jam.
All these delectables pair well with Seville's tightly curated wine selection, sbowing an emphasis upon Spanish vino (por supuesto); many selections are available by the glass. There's also a very good selection of cocktails -- traditional and signature -- and some spirit-free options.
"From the Garden" selections include salads (Caesar, beet, and others), as well as lemon polenta and roasted heirloom carrots. The more meat-centric will enjoy a spectacular pork osso buco with pistachio mint chimichurri, filet mignon, and an eighteen-ounce boneless ribeye. If you're looking for fish, you're going to love the beautifully prepared King salmon and sea bass.
The pasta is superb, with some delicious dishes like duck sausage with orecchiette, Wagyu Bolognese, little seafood purses dressed up with truffle, and prosciutto with Parmesan cream.
