Miru - Chicago
Miru at the St. Regis Chicago is yet another Japanese restaurant and yet another concept from Lettuce Entertain You...and it is awesome. It might seem like the last thing we need on the Chicago dining scene is another sushi place, but Miru at the St. Regis Chicago stands above the rest and demands attention... with a lot more than just spectacular sushi.
In a hotel, the St. Regis, that's beautifully designed by Jeanne Gang's award-winning architectural firm and that has luxury rooms that hover around $1,000/night, you'd expect something special, and Miru delivers.
Because it's in a hotel, Miru is a breakfast-lunch-dinner operation. "The lunch and dinner items are a combo of sushi bar and izakaya favorites," explains Eater Chicago. "A Miyazaki A5 wagyu zabuton is a decadent choice for beef eaters. A hearty fried whole snapper with herb salad and ginger miso is another highlight. Foie gras with crispy rice rolls and bluefin tuna ribbons are other signatures. LEYE’s Sushi-san has dabbled with veggie sushi with Mighty Vine tomatoes. In a similar vein, there’s a pretty confit tomato dish."
On the dinner menu and in line with traditional Japanese restaurants, are many familiar starters, sometimes with a twist. Gomaae, usually prepared with spinach or green beans in sesame sauce, is here made with broccolini and crispy kale in a sweet sesame soy.
From the raw menu, there's hamachi with lemon and white ponzu; bluefin tuna and crispy shiso in a sesame vinaigrette; and A5 Wagyu with a warm miso brioche, protein so flavorful they are beautifully delicious without adding heat to the mix.
There are a number of traditional and signature maki, and for fish lovers, lots of piscine selections to choose from, including pan-seared salmon in peanut sauce; diver scallops in a miso broth; and crispy (boneless!) whole snapper.
If you have meat on the mind, there's wonderful prime beef: center cut beef filet, New York strip, and the Miyazaki A5 Wagyu Zabuton.
To drink, a wide selection of cocktails, wine and sake.
