All the beef originates from Shenandoah Valley Family Farms--one of a handful of small family farms in Virginia's Shenandoah Valley. It's all locally raised on a farm that's environmentally friendly. The cows, of course, are all treated humanely.
Diners may choose from two dry-aged steaks: a 30-day, dry-aged New York strip or 30-day, dry-aged ribeye. Other steak choices include a New York strip au poivre, ribeye and filet mignon. Non-steak choices range from lobster ravioli to pan-roasted chicken breast.
