The namesake specialty is a traditional appetizer from Ecuador made with fresh corn and cheese, steamed inside a corn husk. Other menu options include empanadas, potato pancakes served with fried eggs, chorizo, and avocado, and quimbolito, a dessert pudding consisting of Cognac and raisins steamed in a corn husk.
