The Joliet-limestone building housing this Lettuce Entertain You cafe is one of the few structures to survive the Great Fire of 1871. Although the standpipe of the Water Tower across the street was removed 1911, this Pumping Station, built in 1866, is still in operation.

"Flat sammies" are grilled sandwiches served on foccacia-like bread. Flatbread pizzas, chili, soups, salads and breakfast items also feature at this counter-service cafe, handy to Michigan Avenue shopping and the Lookingglass Theatre, also in the Pumping Station. Seasonal hours tend to be later in the summer months.
