The Dawson Kicks Off Transportive Pop-up Dinner Series

Pop-up restaurants and dinner series' are a dime a dozen in Chicago nowadays. It takes a special concept to truly stand out and entice diners. It takes a transportive journey to the rural landscape of Wisconsin, all by way of a few themed drinks and dishes. The Dawson is kicking off an imaginative, adventurous new pop-up dinner series later this month with an event dubbed "From Wisconsin... With Love." You will love it.

Launching on March 26 at 6:00 p.m. The Dawson's whimsical new pop-up series begins with an homage to camping in the great Wisconsin outdoors. It's a walk-around cocktail dinner format that serves as a partnership between The Dawson and Wisconsin's Death's Door Spirits and Bittercube. The Dawson's Clint Rogers, together with Bittercube's Nick Kosevich and Ira Koplowitz, has whipped up a six-course cocktail menu designed to pair with dishes from executive chef Shaun King. 

In the spirit of Wisconsin woodlands, The Dawson will bring the great outdoors inside with design accents like an ice fishing tent, a campfire stove, and a bonfire. 

Cocktail and food pairings for the evening include a Shanty (Death's Door gin, elderflower, green apple, horseradish, Bittercube Jamaican No. 1 bitters, sparkling wine) paired with fluke, lardo, fennel, and tangerine; Baraboo Trail (Death's Door gin, grapefruit, mezcal, Wisconsin maple syrup, salt, Bittercube Corazon bitters) matched with romanesco steak, celery root, cauliflower, and cerula; and Ghost Story (dried orange- and cherry-infused Death's Door white whiskey, "Raisin Bran-y" syrup, Bittercube Cherry Bark Vanilla bitters, orange, cherry) and black sugar flambé with chocolate ganache, barrel-smoked sugar puff pastry. 

Tickets for the Wisconsin pop-up dinner are $65 and can be purchased on The Dawson's website. The dinner series will continue on April 23 with a French bistro-themed cocktail and food event with partners Scofflaw and The Violet Hour
