Reservations at Rose Mary are taken 60 days in advance, and it is one of the harder places in Chicago to reserve a table; that's because it's so awesome.

John Flamm is bringing to Chicago a high-end take on traditional Croatian cuisine, which is not much represented in the city's vibrant dining scene. Flamm is aiming to change all that.

As reported in Newcity, Croatian culture has "'such great, amazing food, and it doesn’t get spotlighted somehow, especially for a citywhere we have such a big Croatian and Balkan population,' says Joe Flamm, former executive chef at Michelin-starred Spiaggia, “Top Chef” winner and owner of soon-to-open Croatian-Italian restaurant, Rose Mary."

So what's for dinner? Surprises, that's what.

The gnocchi, a fav on many Italian menus, is here stuffed with beef cheek pašticada (fragrant sweet-sour sauce), paški sir (a sheep's milk cheese), and basil -- a Croatian twist on an Italian classic.

Risotto comes in several versions including Skradin, with veal breast, parmigiano, chicken thigh, tomato: sort of Italian, but different.

Cevapi is an Eastern European standard, and it comes with lepinja (flatbread), ajvar (pepper relish), kajmak (traditional Serbian cheese) and red onion. This is a must-try dish.

Lamb shoulder is done Croatian style, with blitva (a leafy green, like chard) and lamb fig jus.

To drink, there are some fascinating Eastern European wines, like aTeran Vina Fakin Istria, 2019. a rose from Croatia, Pullus Starkerska, a Pinot Grigio from Slovenia, and Plavina, a medium-red from Croatia's Dalmatian Coast.

Dessert is decidedly Eastern European with Squash Cake (walnuts, sweet cream icing, apple almond puree) and Apple Crostada with salted caramel gelato.

For a final sip, consider Muscat Jean-Baptiste Arena "Grotte di Sole" Patrimonio from Corsica.

All this marvelous and little-known cuisine is served in an atmosphere of casual sophistication, and glancing around the diverse dining room, you'll see that it appeals to all age groups...it's different and delicious.
