Regards To Edith - Chicago
Another noteworthy project from Chicago-based restaurant and bar group Heisler Hospitality (Barrelhouse Flat, Lone Wolf, Bad Hunter, etc.), Regards To Edith is located on the first level of the Google Building in the Fulton Market District. It's adjacent to Prairie School (another Heisler destination) and focuses on classic Chicago dishes. The restaurant gleefully plays up local favorites like potato pierogies, chicken Vesuvio and Italian beef.
For example, the Italian beef has been modernized and upgraded by using sliced prime rib--which justifies its $19 price tag. There's also a pizza puff that replaces mozzarella for burrata. It also contains pepperoni oil and fresh marinara. Other intriguing dishes include matzo ball soup made with foie gras, shrimp de Jonghe and a churro souffle for dessert.
The cocktail menu consists of classic and original drinks. There's the King's Old Fashioned, which is made with apple brandy, plus Maxwell Street Sour and Deli Counter Fizz made with Malort.
