Farm-fresh Midwestern ingredients are the focus at this little-known spot inside the Marriott, which boasts a rooftop garden, complete with apiary, to supply its kitchens with produce and honey. They also sponsor an acre of farmland at Heritage Prairie Farm and work extensively with other area farmers and local purveyors. Harvest butchers its meat in-house and smokes its own bacon, hams and house-made sausage; its bakers turn out croissants and a daily pie flight; all soups, dressings and sauces are made from scratch. The beverage program includes its own beer, brewed by Harvest chefs at BevArt, wines made from grapes crushed in the hotel lobby, signature soda pop made at Filbert's and private-blend coffee from Bridgeport Coffee Co.
