Eddie Merlot's

Eddie Merlot's - Ashburn

Steak and red wine go together like diamonds and Liz Taylor, so when Eddie Merlot founder Bill Humphries decided to open his first classic steakhouse in Columbus, Ohio, the name came easy. The long-time businessman named the successful steak chain in honor of a loyal client and frequent dining companion named Ed, who just happened to be a big merlot fan. That means, of course, that diners can count on an exceptional wine selection.

From robust merlots--including Eddie Merlot's own brand--to syrahs, zinfandels and pinot noirs, the restaurant's collection is vast. There are also classic cocktails and signature drinks like the Berry White martini (strawberry and raspberry vodka, fresh sweet and sour, DeKuyper triple sec, fresh berries), Burnt Orange Manhattan (Eddie Merlot’s single barrel bourbon by Knob Creek, sweet vermouth, flamed fresh orange zest, Royal Harvest Bordeaux cherries) and white sangria.

Eddie Merlot's specializes in prime-aged steaks and fresh seafood. All steaks are aged a minimum of 21 days, hand-selected and primarily cut in-house. They range from a 16-ounce prime ribeye to a 16-ounce bone-in filet mignon. There are also a number of reserve cuts like Greg Norman's signature wagyu and dry-aged prime Tomahawk ribeye. And those looking for leaner cuts may choose from bison filet mignon or bone-in bison ribeye.

Non-meat eaters will find many options at Eddie Merlot's. Choose from vegetarian pan-seared gnocchi, cedar-roasted salmon and crab-stuffed shrimp.

A children's menu offers prime cheeseburger sliders, mac 'n' cheese and a four-ounce salmon fillet.
