Sepia's Pickled Fennel

Ingredients

Pickling liquid

  • 1 cup champagne vinegar
  • 1/2 cup sugar
  • 1 cinnamon stick
  • 6 black pepper corns
  • 1 piece star anise
  • 6 coriander seeds
  • 1 fennel bulb, very thinly sliced

Directions

  1. Combine all the pickling liquid ingredients in a small saucepan and bring to a boil. Reduce the heat to a simmer and cook 20 minutes. Strain and let cool slightly.
  2. Pour the warm pickling liquid over the sliced fennel and let it come to room temperature. Cover and refrigerate overnight.
