The restaurant is named for Guanajuato (pronounced "juan-a-wotto"), the state in the central highlands of Mexico where Chef Margarita Challenger grew up. Her menu offers dishes such as blackened tilapia fajitas, tacos filled with barbacoa (slowly cooked, pulled goat meat) and grilled pork chops lightly covered with mole poblano.
