Maple & Ash Debuts Eight Bar

Have you ever dreamed of having a cocktail inspired by a Magic 8 Ball? Well dream no more, because Maple & Ash has taken the ultimate nostalgic curiosity and made it real, with the addition of their brand new Eight Bar & Patio. Debuting at the perfect time of year, the patio is not only a stellar new addition to an al fresco Mecca of a neighborhood, but a fun and unique option for those looking for a little whimsy with their dinner. Here’s everything you need to know about your favorite new Gold Coast haunt:

"Very Doubtful" at Eight Bar

The food menu reads like a hit list of comforting bar food, elevated by chef Danny Grant. Expect classic American dishes upgraded with opulent ingredients and masterful techniques, like an aptly dubbed “Epic Hot Dog,” bacon-wrapped and topped with caramelized onion, foie gras, black truffle and cognac mustard sauce. There’s an Eight Ball Sub sandwich with meatballs on a roll with giardiniera, arugula, green goddess dressing and a “spaghetti back.” There’s also a warm butter-drenched lobster roll with bibb lettuce, tarragon, Old Bay and chips. Maple & Ash’s downstairs burger is still present and accounted for as well, made with cheddar, pickles, red onion, Dijonnaise and fries.

Epic Hot Dog

The jewel of the Eight Bar, though, are the cocktails, all of which are inspired by the Magic 8 Ball. These include a drink called Outlook Looks Good, featuring Madeira, Carpano Antica, orange bitters, smoked ice cube and whiskey mist; the Ask Again Later with Green Chartreuse, Chareau, lemon mint verbena shrub, ginger beer and lime; and All Signs Point to Yes, with Russian Standard vodka, lime, ginger beer, housemade Fernet and mint. 

Along with the food and cocktails, partner and director of wine & service Belinda Chang is overseeing the wine list. 

Located on the firth floor of Maple & Ash, Eight Bar is now open Monday-Sunday from 11:00 a.m. until 2:00 a.m. for the bar and from 11:00 a.m. until 10:00 p.m. for the kitchen. There’s also a late-night menu that runs until midnight.
