Chipotle Restaurant Brings Tofu to Chicago

For years, Chipotle Mexican Grill has been changing the way people think about fast food through its proclivity for wholesome sourcing and fresh philosophies. The latest example of Chipotle's quickservice innovations also marks the chain's first major menu addition, as the restaurant gradually adds tofu sofritas to its menus across the country. They originated earlier this year in San Francisco as a way to test out another vegetarian-friendly option. Following the success of their initial test run, they expanded to the rest of northern California, followed by southern California, and eventually all of the Pacific Northwest. Tofu was a hit. Next they brought tofu to Denver, the origin of the Chipotle brand, and now they're getting ready to sweep Chicago and the Midwest. The new tofu sofritas debut in all 83 Chicagoland Chipotle locations on Monday.

This is not your typical grocery store tofu, you guys. Sourced from artisan California producer Hodo Soy, the tofu is organic and non-GMO, with richer, creamier, and nuttier qualities than standard blocks of tofu. Hodo Soy is one of the most esteemed tofu purveyors in the country, originating as a farmers' market entity and growing to the nationally revered brand it is today due to response from the public and restaurateurs. The mantra at Chipotle is to only serve food that they feel tastes great, and upon sampling Hoda Soy at a farmers' market, they knew it would be a great fit for their next endeavor.


Sofritas is basically a chili-like dish without any meat. Shredded tofu is braised with chipotle chiles (naturally), roasted poblanos, tomatoes, and spices, cooked until it forms a chili-like medley. It's hearty, heady, and potent, ample enough to satiate any diner's craving for something meaty. Although crafted with vegetarians and vegans in mind, the sofritas are an apt addition for anyone looking to venture out beyond the usual beef, pork, or chicken. The sofritas are available in tacos, burritos, burrito bowls, and salads. Order them sans cheese to make them vegan. With their continued push across the country, Chipotle hopes to next expand to Washington, D.C., Philadelphia, and other eastern markets.
