Brunch Bites: Villains and Adamus

In this week's batch of brunch bites, Villains begins brunch in the South Loop and Adamus prepares its brunch program for an October debut.

In both its past and present iterations, Villains has been known for its burgers (the current version topped with beef fat mayo is definitely worth noting), but now there's more to love about the South Loop bar and restaurant with the launch of brunch service. Under the direction of chef Dennis Stover, the beer-focused brunch program is designed to heal hangovers and pair seamlessly with the beer list. Items include Cola-brined brisket hash with potatoes and fried eggs; pork head scrapple with fried eggs and maple vinaigrette; ricotta crepes with mushroom ragu; and plenty more. In regards to those beers, some apropos brunch offerings are the Megalodon Imperial Coffee Porter, the Breakfast Oatmeal Stout, and Saison du Tracteur. There's also an exclusive Bloody Mary beer (!) and cider mimosas. Brunch is served on Sundays from 10:00 a.m. until 2:00 p.m. 

Next up on the brunch roster is Adamus, the restaurant inside the Silversmith Hotel planning to debut brunch next month. On the docket for the weekend menus are classic-inspired American creations like cardamon-scented brioche French toast, steak and eggs, and fried chicken and waffles with sausage gravy. To drink, a full brunch drink list includes cocktails such as the St. Ger-Mosa made with St-Germain, Prosecco, and orange juice; breakfast punch featuring Ketel One, Midori, Amaretto, lime, and cranberry; and the Monster of the Midway Bloody Mary with bacon-infucsed Grey Goose, house mix, and a whopping 14 garnishes. When brunch gets underway in October, it will run from 11:30 a.m. until 3:00 p.m. on Saturdays and Sundays.
