Whiskey Trust/Chloe's - Chicago
Spin--the notorious nightclub best known for "shower" night--is no longer. In its place are two modern venues owned by the same team: spirits distillery/cocktail lounge Whiskey Trust and high-energy dance club Chloe's.
Whiskey Trust's main focus is its small-batch whiskey (millet and rye) and vodka program. It also serves as the more downscaled of the two operations, with a more laid-back setting. The interior’s focal point is a classic, reclaimed oval bar, which seats approximately 40 people, and antique accents that include a 100-year-old barn doorway imported from Colorado.
Whiskey Trust's small bites are designed to pair with the spirits and cocktails; offerings include a Virginia oyster served with a shot of Whiskey Trust’s whiskey and mignonette as well as a pickled beet torchon that utilizes the bar’s house-made vodka.
The 5,000-square-foot Chloe's features a lower level dance floor and an intimate cocktail lounge on the second, overlooking the dance floor and DJ booth. The look is inspired by Chicago’s 1980s club-culture as well as the Chelsea and Bowery neighborhoods of New York.
