Quiote--from former The Salsa Truck owner Dan Salls--is part restaurant, part mezcal bar and part cafe. It collectively serves as an homage to the regional flavors of Mexico, the agave plant and the producers and artisans behind it all.

Along with its subterranean mezcal bar, Todos Santos, Quiote's main-floor dining room features contemporary takes on Mexican-inspired cuisine, utilizing local and seasonal ingredients as the foundation.

During dinner, shareable dishes and snacks include mussels Veracruz, fried oyster tacos, avocado salad, chicken en mole, crab tostadas and bone marrow with salsa macha and cilantro. Brunch is served on weekends, featuring items like baked pancakes with burnt cinnamon, rajas tacos, biscuits with chile honey, pig ear chilaquiles and fried chicken tortas. There is also a lunch menu.

Off The Record Test Kitchen, located in Quiote’s upstairs private dining space, is a chef incubator and innovative measure to give "off the record" team members who work behind the scenes each day a chance to get hands-on experience creating their own tasting menus for the public. Guests for these exclusive monthly dinners will have the opportunity to taste never-before-seen creations and new interpretations of classic dishes stemming from each chefs' unique culinary backgrounds.
