Goose Island pioneered the brewpub trend in Chicago, and it continues with the likes of Forbidden Root establishing their interpretations for the next generation. What sets it apart from other local brewpubs is that it's Chicago's first-ever botanic brewery.
The company introduced a new style of craft botanical beer using natural ingredients, including herbs, spices, barks, roots, honeys, stems, seeds, nuts, vanilla bean and cacao beans. They serve a signature beer, plus a rotating list of flavors at the West Town-based brewpub.
Dishes are seasonal and created to match the beers, from brunch to dinner service. Fans of Forbidden Root are encouraged to purchase some to enjoy at home: Growlers come in 32 ounces or 64 ounces.
