Phil Georgouses opened this Skokie fine-dining spot in 1949, and took a hand almost up until his death at 87 in 2010, Today, operations are in the hands of his daughter Maria and her husband, Rich Franco. Steaks, chops, seafood and Greek specialties feature here, with made-from-scratch salad dressings and desserts, and farewell gifts to diners, much as it was 60 years ago.
