Chef Matt Kerney, formerly of Michelin-starred Longman & Eagle, heads up the kitchen in this fine dining restaurant that specializes in 9- and 12-course tasting menus, two of which are fully vegan. Supported by a carefully curated wine list that’s the equal of any Chicago fine dining establishment, Kerney’s creations, from both regular and vegan menus, are carefully craft and well-thought-out.

Supported by a carefully curated wine list that’s the equal of any Chicago fine dining establishment, Kerney’s creations, from both regular and vegan menus, are carefully crafted and well-thought-out.

Both regular and vegan menus are worthy of attention, but it’s the vegan menu, because it’s so unusual at a higher end restaurant, that’s getting the most attention. Kerney works to develop vegan options that are not, in his words “stacked with hydrocolloids [thickening agents like starch, guar gum and pectin].” Kerney also avoids meat substitutes, like tofu and seitan, preferring instead to have the vegetables stand on their own. Kerney takes the time to prepare and precisely arrange grains, fruits and vegetables, and he aims to be doing more than “simply throwing olive oil on everything.”

On the regular tasting menu, standouts include Osetra caviar with potato chip ice cream, sunchoke agnolotti with venison, and wagyu with salsify and potato souffle.

Of course, there are also gluten-free options.

The 20-seat dining room is intimate and comfortable, and a cocktail cart provides for tableside service.
