You don’t have to cook Christmas dinner. After celebrating its 30th anniversary, Carlos’ Restaurant in Highland Park will close New Year’s Day. Carlos and Debbie Nieto’s venerable North Shore restaurant will reopen sometime thereafter as a new concept called Nieto’s. Meanwhile, a variety of events will allow patrons to say farewell to the old Carlos.
