Chicago: Cake capital of America? Congrats, Mark Seaman!

Dessert Professional recently named Chicago pastry chef Mark Seaman, Certified Master Cake Artist and chef instructor at The French Pastry School, one of the Top Ten Cake Artists of North America for 2013.

Seaman’s previous honors include the Bronze and Silver medals, in 2003 and 2005 respectively, from the National Wedding Cake Competition. In 2007, he won First Place Honors at the Grand National Wedding Cake Competition at the Sugar Arts Festival in Tulsa, Okla.

“Cakes,” Seaman says, “are very personal creations for temporary enjoyment. They should reflect the personality of the person for whom the celebration is given as well as the personal signature of the designer.”

Between the French Pastry School and the Wilton School of Cake Decorating and Confectionery Arts, plus the area’s other culinary schools, Chicago may be the cake capital of America.
