iNG and Moto Chef Homaro Cantu and Bread & Wine Chef Curtis Gamble are trading places. Cantu’s menu will include: Maitake mushroom “biosphere”; black truffle pasta with edible candle; tomato waffle cone; avocado, yuzu, herring salad; sea-bean tempura and bacon-fried salmon belly in an “ocean breeze setting”; and “Zen Garden,” wasabi, sesame, daikon, kurobuta pork belly.

Gamble’s menu will include: Oeufs en gelee, eggs in gelatin; fried bologna with Flamin Hot “Funyuns,” cheddar wiz, bread & butter pickle; smoked corned beef brisket with pot liquor, mustard seeds, Carolina BBQ and potato crisp; popcorn panna cotta with salted caramel, caramel corn; and peanut-butter custard with caramelized white chocolate “Magic Shell,” pretzel nougat.
