David Burke's caesar salad.

Specially-trained caesar-salad baristas — they call them “Caesaristas” — mix up the greens tableside at David Burke’s Primehouse in River North. Lunch options (available as part of 30-minute meal) are “classic,” topped with items such as grilled chicken, grilled shrimp, grilled filet mignon or seared ahi tuna; “creative,” featuring butter-poached lobster, smoked salmon or crab cake croutons, and “crazy,” over the top with smoked Rocky Mountain oysters or foie gras. The basic salad is $14; add-ons run $3 to $17.
