Tuscan cuisine highlighted at Winnetka cookbook dinner

 

UPDATE: The event at Corner Cooks has been canceled. Johns will instead hold a limited, private cooking class at 1 W. Superior St., Chicago, on Aug. 31.

Recipes covered include frittura di autunno, battered and fried fall flowers and vegetables; pan’ santo, bruschette with sauteed greens; ribollita, vegetable and bread soup; peposo, beef braised in red wine with black peppercorns, served with polenta; pomodoro, fagioli, e cipolline, roasted tomato, beans and cipolline onions; and Virio’s figs.

The cost of the class is $75, with cookbooks available to buy at $18.

Italian-cuisine expert and cookbook author Pamela Sheldon Johns from Montepulciano, Italy, comes to Winnetka Wednesday, Aug. 31, for “Dinner by Presentation,” a five-course dinner, presentation and book signing at Corner Cooks. Johns has lived in Tuscany for more than 20 years and has authored over a dozen books.

Cucina Povera

 

Signed copies of Johns’ latest work, “Cucina Povera: Tuscan Peasant Cooking,” are included in the $100 price ($80 without the book).

The menu and presentation will focus on the Tuscan recipes featured in the book, with such dishes as potato ravioli, vegetable-bread soup, and zabaglione gelato.

“Cucina Povera” is so new that it isn’t yet available in stores, and copies are being hand delivered from Italy.
