If you’re looking for something different for your Fourth of July cookout, stop in to The Butcher & Larder in Noble Square for some fresh-cut variety meats, such as this beef heart, $6 per pound. Cut to order, the all-natural, grass-fed meat comes from Quarter Circle Seven Ranch in Marengo.

What to to do with beef heart? “They are great for grilling, slow cooking and grinding for chili or pasta sauce. Very beefy,” says The Butcher & Larder proprietor Rob Leavitt. His market is Chicago’s first sustainable, whole-animal butcher shop.
