North Shore Distillery opens for tastings, tours

Lake Bluff-based North Shore Distillery opens its new tasting room beginning Friday, June 10. Visitors (age 21 and older) will be able to sample spirits and cocktails made with the company’s vodkas, gins and specialty spirits from 4 to 8 p.m. every Friday and 1 to 6 p.m. Saturdays.

By reservation, North Shore will also offer limited distillery tours at 6 p.m. Fridays and 2 and 4 p.m. Saturdays. Tour-goers will see the company’s still, dubbed Ethel, in operation and learn about distilling, as well as North Shore’s unique production process. The tours cost $10 and include a tasting of five spirits.

Derek and Sonja Kassebaum founded Illinois’ first boutique distillery in 2005. Signature products include Distiller’s Gin No. 6, Distiller’s Gin No. 11 and North Shore Vodka. They also produce one of the few aquavits made in the U.S, and Sirene Absinthe Verte. Their latest product is Sol, a vodka infused and distilled with fresh citrus fruit, chamomile and spices.

The company’s libations have received gold medals from the Beverage Testing Institute and the San Francisco World Spirits Competition, among other accolades.
