Oil up rusty recipes at Chicago Passover class



Passover’s coming! The annual Jewish holiday commemorating the Exodus commences at sunset April 18, and the Spertus Institute of Jewish Studies in the Loop wants you to tune up your Pesach cooking at “Passover Boot Camp,” a one-evening holiday crash course from Chef Laura Frankel at 6:30 p.m. Tuesday, April 5.

Frankel, executive chef of kosher catering at Spertus and author of “Jewish Cooking for All Seasonsand “Jewish Slow Cooker Recipes,” will show how to turn the usual festival of saturated fat, starch and cholesterol into a more healthful celebration.

Frankel will cover pre-Passover preparation, the seder meal, global ingredients for eight days of versatile Passover meals and treats and demonstrate kosher recipes, including confit vegetables, poached fish and others with an emphasis on using olive oil. Karen Rose, owner of City Olive in Andersonville, will be on hand with samples of kosher-for-Passover olive oils.
