Dinner offers caviar in every course

The finest of American caviar and world-class wines come together at 6:30 p.m. Wednesday, Feb. 22, when Collins American Caviar and Wines of the World contribute to an elegant dinner at Shaw’s Crab House in River North. Carolyn and Rachel Collins, caviar experts, will be on hand to talk about their products.

The evening begins with a reception featuring passed caviar hors d’oeuvres, followed by an opulent four-course caviar dinner prepared by Shaw’s chefs Anthony Keravec, Naoki Nakashima and Lauro Sanchez. The main course will be a “Turf and Surf” of truffle caviar with confit beef and a relish of wasabi caviar with Asian-style tuna. Even the dessert includes caviar: wasabi and ginger caviar with banana roll, rum sauce and Asian mint ice cream.
