At noon Saturday and Sunday, Nov. 14 and 15, master Japanese seafood cutters will hand-carve giant, 400-pound bluefin tuna into sashimi in public demonstrations at Mitsuwa Marketplace in Arlington Heights.

The massive maguro and the samurai carvers are being flown in specially for the demonstration. They use long, swordlike knives to slice up the tuna from one end all the way to the other. After the hour-long performance, the restaurant-quality sashimi will be sold at special prices. All parts of the fish will be used.

These rare demonstrations take place only once a year. (And, given the threatened status of this fish, who knows for how long?)
