HAPPY ANNIVERSARY, Bistrot Margot. Old Town’s French stalwart celebrates its 10th anniversary in October. Chef Phillip Foss of Lockwood in the Loop reflects in his blog about his time there.
BLOG TO BURGER SHOP. Ever wonder what it would take to open a fast-food restaurant? Eddie Lakin is blogging about it as he works toward the opening of Edzo’s Burger Shop in Evanston, confiding everything from his triumphs in finding used kitchen equipment to his worries about running out of capital.
FISHY FIRST. Shaw’s Crab House in River North and Schaumburg have become Chicago’s first seafood restaurants to achieve the Marine Stewardship Council’s Chain of Custody Certification, which assesses and verifies restaurants and their supply chains for seafood sustainability. Among other things, certified restaurants must retain complete records about which fish species have been used when, in what quantities, and what has been done with them. Their fisheries and distributors all must also be approved for restaurants to receive the designation.
CONGRATULATIONS to Cooking & Hospitality Institute of Chicago student Justin Selk, winner of the Aloha Kitchen Challenge and a paid internship at Roy’s.

SUBSCRIBE. Subscribe to our RSS feed and get this blog delivered directly to your feed reader. And, here’s a cool thing I just found out how to do: If you only want to see posts about, say, Italian food, or posts related to Streeterville, just click on that keyword in the tag cloud at right, append “feed/” to the resulting URL and put that into your feed reader. This works for author bylines, too. You can also use search box for any keyword and add “&feed=rss2″ for a custom feed. E.g. http://blog.diningchicago.com/tag/theater/feed/ will subscribe you to only posts tagged “theater” and http://blog.diningchicago.com/?s=zoolak&feed=rss2 will get you every post that mentions “Zoolak.”
