Steak News: PM Prime Takes Flight With Aviation Homage

Have you ever been eating a nice steak and thought to yourself, "I wish there was a plane nearby?" Well you're in luck! Because PM Prime has launched a veritable homage to aviation in Chicago. The Highwood steakhouse, one of the best of its ilk to debut in the northern suburbs, is now serving up steak with a side of flight.

The newly opened PM Prime soars far beyond the typical steakhouse in more ways than one. For example, the decor honors pioneers in the history of aviation, not something seen in your everyday steakhouse. CEO Steve Platcow is the man behind the high-flying vision, amassing a collection of more than 200 black and white photographs depicting historic aviation through the ages. With imagery of the Wright Brothers, Amelia Earhart, the Tuskagee Airmen, and lots more, PM Prime practically doubles as a steakhouse/flight museum, making the dining experience even more rare — pun intended. 

Why aviation? A lot of it has to do with the pioneering gravitas inherent in early day aviators, boldly venturing where no one had gone before, willing to risk it all for the sake of innovation and exploration. These are pivotal components of the human spirit, something Platcow and co. strive to showcase on a daily basis as a restaurant team. The images serve as natural inspiration both for PM Prime team members as well as diners, who get a lot more than steak when they eat here, but also a palpable boost of fascination. 

Food-wise, the new steakhouse features dishes both modern and classic by chef Dominic Zumpano. Think filet mignon and New York strips juxtaposed by Wagyu hanger steaks and osso buco with saffron risotto.
